Quinoa to the Rescue

I hope you all had a great weekend! I sure did, I spent most of my time resting, but it was still great. I haven't been sleeping at all at night and part of that has to do with late pregnancy heartburn. It's terrible. I have started to cut back my dinners and meals big time as a result. I am still pretty hungry so I decided to give Quinoa a go in the form of a salad. I figured it would be filling yet light and would help with my sleep issues. Now don't get me wrong my diet isn't exactly healthy lately, but if I can throw in some fruit and vegetables to my carb loading I feel somewhat healthy. :)

This salad recipe is so light and easy you can make it ahead of time and use it for lunches or dinners all week. So here we go:

1. Get yourself a box of Quinoa.

Cook following the directions. I then let cool in the fridge

Add english cucumber, feta, tomato, onion

Oh la la another view

For the dressing I just combine olive oil, white and red wine vinegar (I don't measure I just make to taste)

Mix it all together with the dressing

And ta da, easy salad is done and ready to eat!

  2. I finally made this last night after checking out your blog for the first time a few days ago.. it was fab! And my husband didn't complain either (after he got his "Sweet, where's the steak that goes with this" comment out of the way)
