Old Family Casserole Dish

The weather has been pretty chilly here and I love one pot dishes that are easy to make, helps with the winter lazies. Plus with two kids under two I don't get much free time at all anymore, free time or free hands. So just as a disclaimer this dish we have every Christmas Eve, but you can make it any time. I just love it, it is one of my favorite meals ever!

There are two ways you can make this awesome casserole either full fat or low fat. Both ways are awesome.

What you will need:

4-5 boneless skinless chicken breasts
2-3 bags of broccoli
1 jar low fat or reg mayonnaise (2 cups for one dish)
Curry powder
Lemon Juice -approx 1 lemon
1 bag of shredded sharp cheddar cheese, or low fat cheddar
2 cans Cream of Chicken Soup (full fat or low fat)
1 bag of Egg Noodles

Take your chicken breasts and boil them in water until cooked through (You can probably bake them as well)

While the Chicken is cooking grab your Cream of chicken, your mayo, lemon juice, and curry powder

Mix them all together in a bowl:  2 cups Mayo, 2 cans cream of chicken soup (curry to how you want it to taste, I like a fair amount)

Next take your frozen broccoli and steam until slightly crisp (1 bag per dish)

Once Broccoli and chicken are cooked lay broccoli down first then layer on the chicken breast as much or as little as you like.

Once the broccoli and chicken are layered you want to add the mayo mix right on top


Finally take your cheddar cheese and swipe a layer over the very top

The last step is to cook this bad boy for 20 minutes in the oven until the cheese is starting to get a little crispy. Serve over a plate of egg noodles and prepare to go to food heaven!!

  2. That looks amazing! Dare I ask for points??? And I'm not a huge fan of curry but I bet cumin and garlic salt and pepper would be good too!
