|Finger Lakes Grapeseed Oil|
The Grapeseed oil is from a company in the Finger Lakes. Here is what Florence Fabricant of the New York Times had to say about the oil:
"Grapeseed oil, which tends to have a less assertive flavor and a lighter body than olive oil, is just catching on in the United States. Finger Lakes Extra Virgin Grape Seed Oil, cold-pressed from the winemaking leftovers of about 25 wineries in the region, is a new one with real personality. Fairly viscous, with a greenish color and an herbaceous flavor, it has more in common with fine olive oil than most grapeseed oils. It’s excellent indressing, as a finishing drizzle and for some sautéing jobs, especially vegetable-based stir-fries. It’s also good to brush on meat, poultry or seafood as it grills, and it’s tailor-made for mayonnaise."

For this recipe adapted from Weight Watchers: www.weightwatchers.com/food/rcp/RecipePage.aspx?recipeid=365391
- You will need 3/4 cup uncooked Farro (I got mine at Trader Joes)
- 1/4 tsp salt
- 2 cups water
- 3/4 cup red grapes
- 1/2 cup chopped celery
- 1/2 cup chopped scallions
- 1 TBSP Grapeseed oil
- 1 tsp Dijon Mustard
- 1 1/2 tsp white wine vinegar (I just use to taste)
- 1/4 cup Goat Cheese
|Cook Farro according to directions|
|Place cooked Farro into bowl and add your sliced red grapes|
|Add your chopped celery|
|Add the chopped scallions|
|Mix it all together...very easy|
|Create your dressing separately|
|Add your Goat Cheese|
|Stir in your dressing and plate.|
I clearly don't do hard recipes and this seriously was one of the tastiest and easiest creations I have done in a while. If you do Weight Watchers a serving is about 4 points and this serves 6. voila!
