Oh yes you know you want it. After this weekend of indulging I am cleaning things up this week but not before I show you one of my favorite recipes of all time, twice baked potatoes! Most of my friends know I am not much of a cook but I do have a few tricks up my sleeve and I do try to practice recipes. This one I pulled out in college when we had a pot luck and wowed everyone. To this day I think my friends still make this dish.
It is really quite easy but very decadent so I only use once in a while for special occasions.
Here are the ingredients you need:
2-4 Baked Potatoes
1/2 bag of shredded cheddar cheese
1/2 cup of milk
1 bunch of green onions
2 tbsp of butter
salt and pepper to taste
First thing is first bake your potatoes I normally do 375 for about 45 minutes, but I check to make sure the skin isn't too hard.
Once they are baked you want to cut a small hole in the top and scoop the potato out and put into a bowl.
Once all your potatoes are empty you want to mix in the cheese, green chopped onions, milk, and butter
Once the mixture is set you then want to spoon it back into the potatoes
