Farro Salad using Grapeseed Oil

I have been in a food rut lately. I don't go out to eat at all during the week because handling the two kids alone is more like eating amongst wild animals. You eat fast and get out of there. Needless to say it is not enjoyable. So I have been varying up my lunch time salads lately and am pretty happy. My dad turned me onto Grapeseed oil as a change from using Olive oil in my salads and I have to say it's a really good swap. I found this recipe using Farro which is a grain, from Weight Watchers but just tweaked the recipe for my liking.

One Year of Blogging!

It is official, I have been blogging consistently for one year! That went crazy fast but in that time a ton has happened in my life. I am so grateful for all the blogging friends I have made, and my followers/readers and how much I have learned about blogging in general. I knew nothing about blogging when I started, I just knew I wanted an outlet to write about my kids, fitness and health goals, and product reviews. Transitioning from a corporate job and city life to stay at home mom and suburbia was a pretty difficult thing to do and through blogging I feel like I maintained some sort of connection with my friends all over.

This year I was pregnant, had a baby boy, was in the hospital for 10 days after having a staph infection from my epidural, and then on IV antibiotics for 6 weeks (nightmare city). We also finally did our backyard, watched Claire grow some hair, and I have been on an ongoing war with my pregnancy weight :). Blogging has always been my outlet to forget about stressful situations and to have fun. While it has been hard to blog consistently now that I have 2 little ones, I still enjoy networking, reading other blogs, and connecting to my readers. Thank you all who follow me and enjoy my posts! Here's to year two!

I hope everyone's Wednesday is going great! I have had the most dull annoying headache all day long and I can't seem to shake it. I am going to blame it on allergies, why not. I went to my old spin class this morning and it felt great! Excited to get back into the routine. I try a lot of workouts and mix things up a lot but spinning has always been a favorite of mine. Plus I got my sisters bridesmaids dress and it is a little snug. uggg. I have some work to do.

Twice Baked Potatoes from Heaven

Oh yes you know you want it.  After this weekend of indulging I am cleaning things up this week but not before I show you one of my favorite recipes of all time, twice baked potatoes! Most of my friends know I am not much of a cook but I do have a few tricks up my sleeve and I do try to practice recipes. This one I pulled out in college when we had a pot luck and wowed everyone. To this day I think my friends still make this dish.

It is really quite easy but very decadent so I only use once in a while for special occasions.

Here are the ingredients you need:

2-4 Baked Potatoes
1/2 bag of shredded cheddar cheese
1/2 cup of milk
1 bunch of green onions
2 tbsp of butter
salt and pepper to taste

PopSugar April Box Review

No this wasn't in the PopSugar box. This is Claire's new friend "doggie".  He was residing in one of Tom's old sweatshirts and as we were cleaning out his clothes she demanded to have this pocket dog. We ripped it out for her and well she is walking around the house giving it high fives. It has gone everywhere with her lately.  Random indeed.

Now onto PopSugar. I seriously get so excited for these boxes to arrive each month.  This month was just ok, not one of their best but I will forgive them. My favorite item is by far the Kai perfume oil. It smells like Gardenia flowers and man for an oil it really sticks around all day. It is light and amazing.

Weekend Shenanigans

Ok so I love beer, it is an obsession I just cannot part with. I look forward to beer and wine on the weekends. Pretty much a habit I have had for a long time. (minus the two times I was pregnant obvi) I went to Costco on Friday and grabbed these two gems.  Firestone Double Jack is amazing. It is full bodied, creamy and excellent. The second is the Old Guardian from Stone Brewery. I normally love Stone, but this one was a little too bitter for my liking, or as my husband says, too hoppy. I took a couple sips then let him have at it.

Stella and Dot Summer Handbags

Happy Friday! I am so tired today, my allergies woke me up at 6am. ho hum. Anyways we are taking our family pictures this weekend and hopefully I won't be sneezing throughout. Other than that should be a nice mellow weekend! What are your plans?

Summer is around the corner and next week Stella and Dot is launching their summer line. This summer they are focused more on handbags, getaway bags, jewelry travel cases, scarves with a few new jewelry items thrown in. I am most excited about the handbag portion as you can see. I love a good tote bag and Stella has great quality items so I just don't think you can go wrong with a bag from them.

Perfect for trips to the pool or beach and to lug around all the stuff that comes along with a baby, also fabulous for weekend trips! What I like most is that these bags are not over $200. Most are between $89-$138!!
