One Crazy Wedding Weekend and Stella and Dot News

I hope everyone is having a fabulous week. I am still recovering from my sisters wedding in Carmel, Ca. Let me tell you I lived it up. Plus we had both our kids in the hotel room with us which meant no one was sleeping the entire weekend. (only made the hangover a little worse).

Guacamole the Ultimate Summer Staple

I may have never mentioned this but my husband is actually the cook in the family. I do the easy recipes, and he will tackle the ones I find on Pinterest that are just a little out of my range. Guacamole is easy, but my husband has this recipe that he made up that has been such a hit with friends and family I just had to share. It is very straight forward but I love it and my parents are asking for it every time we go to their house, even during the holidays.  Read on for some awesome summertime guacamole!

A Nice Weekend and Influencer.com

This past week was pretty fun. We went to a Fresno Grizzlies baseball game mid week and hung out in a suite which I had never done. (plus had a babysitter at home for the kids) The suite was really nice and air conditioned and we had a lot of good food and beers. Yes there was not many in attendance but it is so hot here right now so I wasn't suprised.  It was my first time at the game and I really did have a good time.

Other then that we took advantage of our local farmers market and got some fresh tomatoes and basil for a caprese salad, aka my fave. Tom has also started to stand holding onto something, in this case his dad who has some ice cream he desperately wants. Tom has also been crawling like crazy, as in while I type this I am watching him crawl down the hall and make a right turn. (I then get up to go get him and we start the process all over again). I feel like I just did this with Claire. My beefy little guy clocks in at almost 22lbs so I get my weight training carrying him.

This week we are going to my sisters wedding in Carmel and I am really excited for the wedding, but also to get out of town to the coast. yipee. Any fun upcoming trips for you guys?

On another note I have been obsessed with this new website I read about called Influencer. www.influencer.com.

I received my first product box from them (for free mind you) and it was really pretty cool. I got some whiting toothpaste (large tube), some precision Q-tips, and foot pads for my heels (which I will use this weekend), not to mention some fake eyelashes I am going to try out. I will take some pictures soon but all I did was link my social media accounts and fill out a few surveys and voila! I was in the site today filling out a ton of surveys and unlocking badges galore. It is a really fun process to go through unlock a badge and read other influencers profiles and reviews. Here is some more detailed information on them. If you like it start adding your reviews, I am going to begin my reviews today! http://www.influenster.com/about

A Healthy Potato Salad

Nom nom nom. I love potatoes, If I could run off and marry them I would but alas I am already married. When we went to San Diego a couple weeks back my sister in law told me about this recipe website called Thug Kitchen. I laughed my a** off at the language on the site. Seriously I never thought I would laugh reading recipes. Aerial made the potato salad for us and I fell in love. It was tangy and light but all potato.

Once I returned from San Diego I got some blood work back and it stated that I have borderline high cholesterol. crap. It was up a good amount from a couple years ago so I blame eating ice cream and In and Out constantly while I was pregnant with Claire and Tom. My Dr told me to exercise more (I don't know how I can top what I already do) and to eat lower saturated fat. My diet isn't too terrible but I found a few areas I can cut out the fat and mayo is one of those items.

This salad is perfect then because it uses olive oil rather than mayo. I tweaked the recipe up a bit from the site but seriously its so simple and lasted a couple days.

PopSugar June Box Review

These last couple weeks have been nutty around here, we were in San Diego, and then my husbands mom was in town for a week. And next week we leave for Carmel for my sisters wedding. Summer has arrived! I have to say it's been really fun. Nik and I got some dates and I was able to run errands without having the kids. plus sitting outside (minus the day it was 110) was a lot of fun. Tom also celebrated being 8 months old!

But let's get down to business. I received my June PopSugar Must Have Box and yet again it did not disappoint. As a reminder I pay $39 a month and I am always impressed with what I get.  I also got Nik the PopSugar Man box that was a special edition for Father's Day. I will have him write a review for it, it is pretty amazing.

Amazing New Food Finds

Oh la la isn't that fancy? What the heck is that thing you may be thinking. Well my friends it is my new favorite kitchen appliance. the OXO Good Grips Salad Chopper. I have this thing about lettuce and I pretty much hate it because I can never get the leaves a good small size. Not anymore. This thing is awesome. I throw in at least 2 cups of big spinach leaves and onions etc then before dressing I roll this chopper around the specifically designed chopping bowl and I instantly have a restaurant quality chopped salad. I so highly recommend it if you eat a lot of salads, to me it makes the quality so much better. Exhibit below. And below I only did the chopper a couple times, if you chop longer naturally the pieces become smaller and smaller. These were huge leaves too.
